Cultivating ancient grains has long been a dream of ours—one rooted in a deep appreciation for wholesome, traditional foods. In 2022, this vision took on new urgency when our oldest daughter began experiencing gluten sensitivities. Determined to find a solution that would support her health without compromising on nutrition or flavor, we began researching alternative grains. It was during this search that we discovered Einkorn, an ancient wheat variety known for its digestibility and nutritional benefits.
That same year, we planted five acres of Einkorn and began milling our own flour on-site. To our relief and joy, our daughter was able to enjoy Einkorn products without any adverse reactions. Encouraged by this success, we expanded our operations in 2023 to include spelt—another grain with a rich heritage and excellent baking qualities. Since then, we’ve continued to grow our acreage annually, deepening our commitment to providing nutrient-dense, sustainable grains for our family and community.
